At Cova, a warm, small glass of a delightful Caldo Calcero set the tone for the coming meal. A copa of rich vino tinto accompanied my Ajoblanco Scallop appetizer: an exquisite dish where the sweetness of the perfectly cooked scallop dances with a sauce of crema, caramelized onions, and a hint of garlic oil, creating a symphony of umami with every bite. The ambiance was lively, with the Kill Bill movie score drifting through the air, evoking nostalgic memories. For the main, I savored the Cordera de Aragon, a sumptuous lamb that was a celebration of flavor. Its meat tender and braised, practically melted in my mouth, and was further enriched by a side of potatoes bathed in fragrant au jus. Edith Piaf's timeless melodies filled the space, serenading me as I finished my copa de vino, feeling blissful in the moment. As I contemplated dessert, the rain outside shifted to mist- a perfect backdrop for the postre: refreshing sour apple-basil sorbet, paired with yogurt mousse, yuzu and chocolat
