8/10The appetizer was excellent and the main course was delicious. However, when they gave me the wine pairing, I felt a little different from the top table, such as giving red wine for the fish dish. I even saw white wine being served at other tables. It felt bad because it seemed like different wines were served with the same dishes at different tables. I didn't expect to drink Australian wine in France.

9.5/10The menu was fabulous. We were fortunate enough to try other restaurants like this one prior to eating here. I realize the service was good but not great. In comparison with the other restaurants, we’ve tried, this one could have done better with the service. The food also was very good. However, not spectacular. I would suggest other restaurants around the area before this one.

9.5/10Our dining experience was truly exceptional, with each dish offering a unique and delightful culinary journey. The attention to detail in every plate was remarkable. However, we found the sommelier experience could have been improved. When we expressed that we were seeking guidance, we felt the interaction was a bit rushed, and we didn’t receive the level of support we were hoping for as we’re not very experienced with wine selections. A more patient approach would have elevated the overall experience even further.

10/10+5This is a small bits restaurant. Each plate was very aesthetically pleasing. The food was also very tasty. One plate was gnocchi witch was cooked perfectly and had four sauces on top. PERFECTION. Another plate of Haddock has red grapes and horseradish, the sweet and sour just worked! Not every plate was perfect but they were all fun. This restaurant is not for everyone, but if you are a foodie pays your money and take your chances!

9.5/10This is an ambitious resto - with a hip younger clientele and a semi-open kitchen. Quite busy and interesting and challenging taste combinations. They have one michelin star already and you get the feeling that they'd like to add another one!

8.5/10The chef presents cuisine with personality and sophistication. I would like the sauce to not be too intense in some dishes so as not to hide the delicacy of the ingredients. You can watch the intense movement in the kitchen through a window.

9.5/10Delicious meal - chose the 8 course menu at lunch and was not disappointed! The star of the meal was the oyster dish. Perfectly balanced, fresh, and I have not stopped thinking about it. I came to Paris for a day from the US and wanted to have a couple of exciting, tasty meal experiences. Substance ticked all of the boxes that I was unknowingly looking for. The atmosphere was cozy, the staff impeccably familiar with the ingredients and dishes, and it was fun to watch the action in the kitchen from the Chef's table. I loved hearing where ingredients came from, and eavesdropping on the wine pairings - I don't drink alcohol, but it was clear the pairings were matched perfectly and from vineyards across France. Such a delight!

2/10food was okay. However , the service was really terrible. My family and I wasn’t able to appreciate the story and meaning of the dishes since the service/ waiter was in a hurry , you could barely understand what they’re saying… the service was really off.

8/10Food is excellent and can taste what the chef would like to bring to customer experience. But the service needed to be improved. We come on a rainy day, no attention paied, no one help on hanging the wet coat , the attitude is unwelcoming, the food introduction is like reading script.

5.5/10Food is definitely top level, with some mind-blowing dishes in the menu. However the service is well above what you would expect from a 1-star restaurant: poor English, plates explained in a hurry, scarse courtesy and no flexibility on pairings open request. If the food makes the experience worth it, the service makes me think I will not come back.

7/10Although the dishes are quite creative, only one out of the 6 course menu provided a true representation of the 1 Michelin Star (The Haddock). The rest of the dishes did not provide a well balanced flavor and the horseradish or wasabi overpowered the rest of the flavors, the sauce for the gnocchi was too salty. The service was not solid with several steps missing from a Michelin Star restaurant, such as wine presentation and maintenance of the table.

10/10This was my first Michelin* experience and it was wonderful. We chose the Vibration menu and it was more than enough to leave satiated as well as incredibly impressed. The wait staff was informative, friendly and notable enjoyed that we were enjoying ourselves. I usually tend to enjoy savoury dishes over sweet but the meringue with green chili powder was the hero for me in this feast. Thank you to all involved, and many compliments to the chef!

10/10My favourite meal in Paris. Chef Matthias has the Midas touch when it comes to combining flavours in such a delicate way. We found the lunch menu to be generous and left fully satisfied. Will definitely recommend and revisit.

10/10We were a group of 5 and had a great time at this restaurant . Service was great and the food was excellent . The staff were extremely friendly and attentive , we were even offered a tour of the kitchen as we were still there towards the end of lunch service .Would definitely return .

5/10The dishes’ presentation were great, staff were good, except for the fact that some staff would not explain the ingredients of the dish, but it’s fine. However, flavor was just not there. Many of the dishes were too salty and were not edible. It was my first time in France so I was not sure if that’s just how the food is there, but I went to another Michelin restaurant in Paris and that one was much better with the flavors. I would not recommend it and would not go back.

9.5/10The food was incredible, never thought I would love escargots! However the service was lacking in the communication hand off between servers. We had the wine paring but we’re not served the last glass. Better communication between the servers is needed to ensure smooth transitions.

8/10I’ve been to Substsnce a few times but JD not been there for a while. It was a surprise that you have to go for menú degustación (previously it was a la carte). We went for the 7course menu with wine paring. Overall this continues being a great restaurant with a good ambience and food but yesterday we were somewhat disappointed with the menu (some of the food had flavors that were too intense, e.g. too much lemon flavor that ‘killed’ any litter ingredient). In addition, the wine serving was quite poor - you are warned that they serve 6 half glasses (and yes, these are really half , as in very little, wine serving) for 70€. Even for a restaurant with 1 Michelin star in Paris, this is expensive. As to the wines, they make great paring, but the service must improve (forgetting to change glasses, a dirty glass , forgetting to serve one red wine…) all in all this is A great place but yesterday just not as good as in the many other times we had come to Substance

10/10Incredibly innovative menu. Everything was well prepared and different from any other meal we have had in France. We had the 5 course tasting lunch and every course was extraordinary and unusual. I would highly recommend Substance to gourmands who want a meal that goes beyond the ordinary.

10/10First of all, the atmosphere of the restaurant is really modern, passionate and warm. Beside, the sommelier is professional and introduce each wine in detail. Of course, the waiter and waitress are pretty nice to provide excellent service to us. As for food, it’s extremely creative and delicious without doubts, l greatly like one of the dishes, it reach perfect balance in harmony with each flavor.

10/10+4Omg. We snuck in here on a last-minute cancellation. The best meal I’ve had in years. The degustation menu of nine courses was unreal. The pair of wines were fantastic. The service was unparalleled. I want to fly back just to eat here again.
