6.5/10We found this particular style of fusion just didn’t work well. The miso soup was fabulous but the sashimi was very chunky and had a very oily sauce. The rice of the sushi was undercooked and very dry. The sushi itself tasted like it has been premade well in advance and been sitting in a fridge for quite sometime rather than fresh made. The service staff however, were lovely and attentive.

10/10Absolutely fabulous food! Excellent rolls, Nigiri, tempura—everything we had was amazing. Visiting Cortina for a week & Fvsion was our favorite restaurant—visited twice. The desserts were probably 3 of the prettiest we’ve EVER eaten & equally as good: the pear, coconut & yuzu looked so real down to the ‘fiber’on the coconut shell, the dimples on the yuzu’s skin & freckles on the pear. Julia was very helpful with recommendations as well as quite personable. Perfect restaurant for a change of pace!

5/10The food was not good, we ordered the ramen and duck bao buns. The ramen basically had what seemed like a miso soup broth, with a tiny piece of Wagyu for protein. Serving was very small. Bao bun was nothing great either. Service was good, but food was disappointing. I would not recommend.

8.5/10This was our 2nd time eating here, after spending 2 weeks in Italy it was a nice change from pizza and pasta. . Also decent vegetarian options, and they have parking.

5.5/10Interesting place. Food wasn’t vial but it just tasted like Itsu for the price of Nobu. Sashimi misto was of mixed consistency and taste. Salmon and tuna was clearly defrosted and cut too thick. It tasted rubbery. Red shrimp was not deveined. Micro-greenery used on other dishes was with a flavor of mold… Service was OK. In any event, if one wants sushi in Cortina, which is a weird craving in itself, then this is the only place to go.

10/10A very good menu and deliscious food, very nice surprises with a muse bouche and two little chocolates at the finish. We loved the deer Utamaro and ramen soup. We would definitely eat here again.

10/10We had a brilliant evening at Fvsion. It is probably the best restaurant in Cortina and the menu is interesting and inventive. We all enjoyed it so much that we are returning for our next trip in a few weeks time. Great food and amazing service!

10/10The staff was knowledgeable, service was excellent and although the menu was unique, it offered something for everyone in our 8 person group. Most of us ordered sushi and sides, the amberjack was an attractive presentation and good tasting. Miso potato soup was very good. The restaurant does charge a per person flat fee which I had not encountered previously (not tip).

10/10Lovely little gem off the beaten track in Cortina. A nice break from 10 days of Tyrolean cuisine. We enjoyed the chef’s choice, 50 piece plate. Lots of interesting and different flavours from regular sushi feasts.

10/10This is the best place to eat in Cortina. A short walk from the centre of town and splendid food. Four of us all chose something different and every course was a triumph. Our waitress was utterly charming and very helpful indeed. Well done Fvsion, you deserve to do well! Wish we could eat this well back home in London so inexpensively.

10/10Excellent dinner last night. Booking was accurately confirmed. Service was fantastic! (The server was very patient with my poor l'italiano). Food was excellent - especially recommend the Mela dessert paired with the 'Pass The Cookies' dessert wine. I would not hesitate to go to Fvsion again.

10/10We had the mixed sushi platter and tempura salmon. Both were delicious and beautifully presented - along with some small treats from the house! If you want a change from Italian food this is highly recommended.

3/10The restaurant food was mediocre. It was advertised as a fusion of Japanese and Italian cuisine, although was a lazy combination of some italian and some Japanese dishes. Most of the sushi was made with deer, which was uninteresting. There was low quality fish, a critical lack of seasoning in certain dishes where necessary, and slow unresponsive service. It took over 30 mins to get the bill after dessert, the waitress kept looking over and saying she’d bring it but never did. Importantly, the restaurant was far from busy or full. There’s no good excuse for that delay. I would highly advise against eating here.

Our restaurant offers sushi, even alternative, because it wants to stand out from the others. We sell 1 roll out of 16 with deer so I don't understand the problem. Most likely you are used to the classic "all you can eat". But no problems and no hard feelings. We are only sorry to read that you do not recommend our restaurant. This is from "keyboard lions". 9.5/10The food exceeded our expectations completely, we had sashimi to start and su-sci (sushi platter) for our main. The best sushi we have tasted. So good we wanted to try the desserts. Highly recommend if you are staying in Cortina. Fabulous attentive service too.

5/10Very lousy service - practically no recommendation provided, we had to refill Prosecco by ourselves. Food as such was acceptable but not exceptional at all, overpriced. Selection of teas was very poor, allegedly due to covid ;)

Buongiorno grazie mille, comunque, per la sua gentile visita. Siamo dispiaciuti per il fatto che il servizio non sia stato all'altezza delle sue aspettative. Ci piace molto migliorare quando incontriamo questo tipo di recensioni. E lo faremo sicuramente. Il covid, purtroppo, come dite voi, ci ha lasciati sprovvisti di alcuni prodotti e si questo siamo veramente dispiaciuti. Mi permetto, invece, una bella risata sul vino. Dalla recensione scrivete che dovevamo riempire nuovamente i vostri calici noi ed invece avete dovuto farlo voi. Diciamo che con una bottiglia di prosecco in 8 persone, c'era poco o niente da ri-riempire. Questi sono servizi che si fanno in locali dove molto probabilmente lo scontrino finale, non come il vostro, non è sicuramente 28€ a testa. Un caloroso e sincero abbraccio. 9.5/10TL;DR: super tasty food, very original and beautiful highly recommend! We have been in the Dolomites since 2 weeks and I can say Fvsion was the best restaurant we have done. Its located just outside of the main touristic area, we went by walking in 10 minutes. The restaurant it located at the bottom of a complex appartement building, there is no view but they did a good job at designing the indoor. We came at 6:30PM which is extremely earlier by Italian standards, we were not served rapidly. Overall the service was not fast but the staff was nice The food was great. Every dish was carefully design in a nice looking plate. You can go classic Japanese food but they also offer more original choices. I started with the Soft Egg (with morlacco cheese and black truffle, excellent. If the chef is reading this I would say it was a bit too salty, but very fine other than this. I then had the Raw of Scampi and Porcini Mushroom which was also delicious. Then the Soba Noodle, the flavors of this dish were amazing, I especially liked the “essence of fir” – well played. We finished with the Tiramisu Breakdown that has nothing to do with a tiramisu but was nonetheless amazing. We also liked this restaurant because there isn’t a great variety of food in the Dolomites, it’s always the same Italian food, which become quite boring. This restaurant really brought something fresh and original. We will go back!

10/10It was just perfect! very different menu, interesting change... charcoal bread is indeed intriguing, nice original touch. Love the tartare three ways and the rack of lamb... definitely worth the short hike...

8/10A cozy elegant restaurant with chic atmosphere hidden away from the centre. Staff were amicably welcoming. Both traditional sushi and creative dishes are worth trying. Free appetiser and macaron before and after the dinner (too sweet though).
