Best place we ate in Cortina - completely exceeded our expectations - amazing. My tip: whatever you do, don't skip the desserts! Staff were friendly, chef is incredible. We booked online pretty last minute (via Fork / Google) and the place wasn't too busy, on a Wednesday evening mid July. Loved the food. Desserts were deceptively simply named "coconut" and "pear" - when they came, they were little masterpieces waaaaaay beyond what we expected. For the rest, I had the Poke bowl and my partner had Wagu beef - they were both delicious. Couldn't fault this place, it was perfect.

We found this particular style of fusion just didn’t work well. The miso soup was fabulous but the sashimi was very chunky and had a very oily sauce. The rice of the sushi was undercooked and very dry. The sushi itself tasted like it has been premade well in advance and been sitting in a fridge for quite sometime rather than fresh made. The service staff however, were lovely and attentive.

Absolutely fabulous food! Excellent rolls, Nigiri, tempura—everything we had was amazing. Visiting Cortina for a week & Fvsion was our favorite restaurant—visited twice. The desserts were probably 3 of the prettiest we’ve EVER eaten & equally as good: the pear, coconut & yuzu looked so real down to the ‘fiber’on the coconut shell, the dimples on the yuzu’s skin & freckles on the pear. Julia was very helpful with recommendations as well as quite personable. Perfect restaurant for a change of pace!

The food was not good, we ordered the ramen and duck bao buns. The ramen basically had what seemed like a miso soup broth, with a tiny piece of Wagyu for protein. Serving was very small. Bao bun was nothing great either. Service was good, but food was disappointing. I would not recommend.

This was our 2nd time eating here, after spending 2 weeks in Italy it was a nice change from pizza and pasta. . Also decent vegetarian options, and they have parking.

Interesting place. Food wasn’t vial but it just tasted like Itsu for the price of Nobu. Sashimi misto was of mixed consistency and taste. Salmon and tuna was clearly defrosted and cut too thick. It tasted rubbery. Red shrimp was not deveined. Micro-greenery used on other dishes was with a flavor of mold… Service was OK. In any event, if one wants sushi in Cortina, which is a weird craving in itself, then this is the only place to go.

A very good menu and deliscious food, very nice surprises with a muse bouche and two little chocolates at the finish. We loved the deer Utamaro and ramen soup. We would definitely eat here again.

We had a brilliant evening at Fvsion. It is probably the best restaurant in Cortina and the menu is interesting and inventive. We all enjoyed it so much that we are returning for our next trip in a few weeks time. Great food and amazing service!
