EAT NATURE: Cuore di salmone delle Isole Lofoten marinato dolcemente in acqua di mare, alghe, agrumi ed erbette aromatiche, bruciato solo in superfice a fiamma viva e spennellato con pomata di burro, ricoperto con polvere di erbette, porro fresco e croccante di cannella.
CIO' CHE RESTA: Carciofi morbidi ripieni di cremoso arrostito con animelle croccanti e polvere di cicoli su ristretto di impepata di cozze.
