Waiters are group of young people (some probably amateurs) who don’t even know about hospitality.
There was a dish requiring customers to dip some oil from a small saucer, followed by dipping some salt from another saucer, then hold the finger food to eat. The waiter was ridiculous enough to tell us that the oil and salt was meant for “sharing”, and gave us two sets of saucers for 3 people. The question is, who should use the second hand oil which has been dipped?
Likewise, guests are asked to “share” butter when they were not provided with a butter knife each.
Also, when my friend has used a knife, I can’t imagine waiter of a restaurant of this level could simply scratch the used knife along the plate edge to “clean” the food residue off it, then put it back into the knife stand, instead of providing fresh knife to the guest. Worse than a fast food shop and super offensive to the guest.

We really liked our experience at Baumaniere 1850. We went with the "Schuss" menu, which was delicious and full of surprises, creativity and attention to details. I particularly enjoyed the souvenir d'enfance, which was a fresh past with chicken soliles. The service and ambiance were also very polished. The only negative caveat, is that the next day my wife suffered symptoms from a food infection and was week. She thinks it was somthing she ate at the Baumaniere. I wanted to inform you to see if other customers signaled it. We still plan to go to their other restaurant in Provence next summer.

As a group who has dined at several restaurants with 3 Michelin stars all over the world, this is absolutely one of the most magical, delicious, and all around outstanding meals we have ever had. The staff provided impeccable service, were extremely friendly, and also knowledgeable about drink pairings and timings, substitutions, and accommodations, including doing a phenomenal job at providing a VEGAN tasting menu. Favorites ranged from the “Childhood Memory” pasta in a chicken jus and Savoie cheese to the dressed up trout and from the “Beauty and the Beast” glazed Swiss chard to the “Head in the Mountain Pastures” milk ice cream and custard. The restaurant easily deserves two stars, and from the other reviews I know I am not alone. Absolutely surpassed expectations, a MUST try.

Words really can't describe our meal... but I'll try :
A sublime dinner in Courchevel. Delicious tasting menu with local products in a gorgeous dining room. Impeccable service thanks to Lucas. A must if in Courchevel. Above and beyond the other fine dining options. Only wows from start to finish.
A special mention for the squab. I'm not a fan of this meat... but this was divine.
Our vegetarian guests were astounded by the veggie menu. Quite uncommon in France. I could go on forever... we loved it!

Atmosphere was great, both the decoration as well as the placement of the tables were well thought through
We picked the 5-course menu (€195pp). While all dishes were good, the trout and pastries were exceptional. The chef makes use of mushrooms, meat juice, pine herbs, and layered dishes, which are quite creative and tasty. At the end of 5-courses we were quite heavy, particularly due to the meat juice in several of the dishes.
Overall very good experience and worth the money.
