10/10Wow. What a restaurant! My mother and I ate here in May and it was hands down the best meal we ate in Madrid. Very intimate dining room where there is a clear view into the kitchen and the massive wine cellar. Room for about 30 people total the tables are spaced very nicely apart so you don’t feel as if your on top of others. The service was impecable. The maitre de comes out in the beginning and give you option of small tasting menu, large, or a la carte. If you select tasting they advise to be surprised and let the chef guide you. We did the large tasting menu and it was incredible. Fresh ingredients that are different every day. This restaurant is well worth going out of the way to eat here.

10/10Welcome to the 21st Century. In a country with one foot still firmly asconced in the 70s, Pabú is a leap into a 21st century 'Haute Cuisine'. Your body thanks you every step of the way.

10/10One of the rare restaurants in Madrid which highlights vegetables and seasonality. Terrific produce and skill are evident along with a passion for only using produce at its best on the day. Remarkable.

Pabú es el proyecto personal del chef Coco Montes, que se ha formado principalmente en L’Arpège, restaurante con tres estrellas Michelín en París. En Pabú trabajamos una cocina de pureza y sencillez. Nos centramos en el producto y su temporalidad, y hablamos de «microtemporadas». La microtemporada se fundamenta para nosotros en llevar un paso más allá los productos que ofrece cada estación, subdividiéndolos en base a la disponibilidad del mercado y seleccionando el producto en el ápice de su temporada. No es necesario pedir menú para mesa completa, sino que es el cliente el que elige en base a la oferta.
