9/10Service and the ambience were absolutely first class. The food was good, but so much messing about with bits of this and that, and burnt offerings, and witches brews said the chef was misplaced and should be in the circus. That said the food was (mostly) tasty. It could be brilliant, but the childish playing with things because he could, rather than because they added something, means this is missing the main point: people go to a restaurant to eat well, not to be played with.

10/10+1Sustanza offers a truly courageous and visionary modern culinary experience with a myriad of beautifully created dishes. The menu is build on different types of Mediterranean vegatables, herbs, fish and seafood dishes, which is refreshing and, I believe, it could easily be served in fully vege\pescetarian form without loss of quality. The selection does not shy from exposing one's tastebuds to uncommon and sometimes extreme tastes of fermented, smoked, bitter, sour and salty. The desserts are a work of art. Wine selection is equally modern to match the food. We've tried an 8-course tasting menu, which in reality is more of a 40-course marathon - be prepared and come with an empty stomach. We would surely come back. I wouldn't recommend this place to people who are aiming for a simply delicious food - it is an adventure with twists and turns, surely worth taking upon with an open mind.

10/10+1A truly special dining experience in a beautifully restored space. The menu is adventurous in an international sense and this is not Campanian food. Fermentation is the theme of the entire restaurant, playing a part in practically every dish. Even some of the wine pairings are blended in non-standard fashion. The kitchen is clearly proud of their work, offering amuse bouche tastes of a variety of dishes throughout the meal. There is not a dedicated gluten free kitchen but they took careful precautions to provide an excellent meal for my wife who is celiac. I think it is important to know the theme of the restaurant up front. If you are intrigued by the concept you are in for a world class meal.

10/10Some of the best food we've ever had! The staff is amazing and the food and wine pairings were an exploration of complex flavors put together so well. The desserts were very unusual and a perfect end to a perfect meal. We got to experience lots of new flavors over the course of the dinner from start to end - couldn't have asked for a better way to spend 4+ hours on a Friday evening.

10/10The service was excellent with excellent attention to detail from the moment we walked in. The setting felt intimate and personal. There were little delightful surprises along the way and staff always took the time to explain every thing that was ordered or offered. The food was extremely interesting and followed some continuous themes that seem to change seasonally. I would definitely dine here again as it was such a unique and elegant experience.

10/10+3The food has origins of Mediterranean cooking, but the imagination and presentation was nothing like traditional Neapolitan cooking. everything was beautifully presented and described by knowledgeable wait staff and accompanied with beverages pairings. This is not just eating meal but gastronomic adventure. A foodie must.
