Michelin guide at the moment, but a star is forthcoming, I’m certain. Beautiful use of salt and rich sauces to elevate every plate. The chef produces deep flavors and multi-layered taste and texture. The fish in the main course of Identité was the only weakness, but perhaps it was just overshadowed by the phenomenal other courses. Lastly, the team was amazingly accommodating to a gluten allergy, making my dining companion feel completely at ease and welcome.
