Description

Bistro de Olliemölle in de Achterhoek in Borculo is een leuke en beloftevolle nieuwkomer in onze gids. De jonge chef Roel Sieverink ontvangt zijn gasten in een historisch pand met fraai achterliggend terras dat uitkijkt over een mooie vijver. Zijn gerechten wortelen in de Franse keuken en krijgen een lichte moderne toets. Denk aan coquille met salade van komkommer, gebrande hazelnoot en schuim van kreeftenbisque. Of aan strak gepresenteerde marbré van eendenlever met fruitige toetsen van lychee naast meringue en ijs van rode biet. Piepkuiken brengt hij hoog op smaak met onder meer PX-saus en krokant uitgebakken kippenhuid. Nieuw, leuk en ambitieus adres om in de gaten te houden.
