Paitan (pollo)
Paitan significa "brodo bianco" ed è il brodo di pollo. Il pollo intero viene bollito per 3 ore, dopodiché le ossa vengono separate dalla carne che viene poi bollita per altre 3 ore, fino ad avere un brodo bianco e cremoso.
Miso (vegetariano)
Il miso è un ingrediente antico ottenuto dalla lunga fermentazione di legumi e cereali (soia, riso, orzo).
