It is not fun to eat in a empty restaurant: fact. The food in this restaurant is really amazingly good: also fact. How the two facts go together is a mystery. Maybe bad night. Anyways the menu is not long and it’s easy to choose, what we had (fish of the day and sashimi) were of the finest quality. As a starter we had actually an appetiser from the bar menu - anchovies on Altamura bread - which was also enjoyable. Recommended if you don’t feel awkward being the only table in the establishment. Also don’t go if your back is not good - the seating is uncomfortable for dining; more of a lounge arrangement.

If you’re ever wandering around Bari, do yourself a favour and stop by Dilman to have a quick lunch, a romantic dinner or a fancy cocktail. Food is tasty, primary ingredients are excellent, pairings are wonderful, service is outstanding and the stuff is the kindest. We had a wonderful dinner and Dilman will most likely become our new favourite restaurant in Bari. 10/10 because I cannot give a higher score.
