10/10I have been to Paris many times in my life, and I have had just about every kind of meat dish you can imagine. I have never had anything as good as the entree (pork belly) and plat (tartare) than I ate at Le Severo. I plan on going back before this trip is over -- and am seriously thinking of ordering three of the pork belly entrees to equal one main dish. It was that good.

6.5/10I really wanted to like Severo. It has a very simple, small and cozy atmosphere… but the lack of any attention to food presentation, lack of use of ingredients to enhance the flavor of the prime ingredients, and copious amounts of raw, flavorless meat just didn’t add up to a positive experience. The wine was good and the service was friendly… but I don’t think I’ll be going back. Regrets.

10/10+1Small but perfect! The tomato salad was so full of flavour, the mushrooms were simple but tasty and the steaks - Wowie! So tender, peppercorn sauce was creamy, frites were hand cut and crispy. Service was attentive and charming. Wine list extensive - we had a red from Beaune, so delish. Highly recommend!!!

10/10At a mere 10 tables, it’ll take a while to reach everyone, but this is one of the world’s great locations for beef. Yes, Spain has a couple of glorious exponents of steak, as do the U.S. & Japan, of course, but the flavors evoked here are just as extraordinary. The intimacy of the place is conducive to interacting with other diners without losing a sense of privacy for most of the meal. I suppose you could specify how you want your meat cooked, but my server (Gaël, whose English is great) just took my order and left. The tomato salad was deliciously simple and perfect for this time of year. The faux filet (strip steak) that arrived was a revelation. It might look a bit raw, but don’t worry—it is absolutely unlike similarly-colored Angus beef—it’s just right. I gather they use Charolais beef, or a similar breed, and prepared this way, it highlights the kaleidoscope of flavors I was unaware this meat naturally has. The fries actually helped to reveal this aspect, too. What a lucky find!

10/10This is the type of dining experience unique to Paris. Such a cool neighborhood feel to the place. We felt like we were at our uncle's house and he was making us his favorite steak with some frites, and a small salad to start that was so simple and delicious. The place is small (you could hear the steaks cooking) yet I saw them move some paperwork aside to make room for a couple who walked in without a reservation. Pretty cool. They don't ask what temperature you want your meat cooked (embrace medium rare), but it's clear they know their beef. Hanger steak with shallots my wife ordered was outstanding, but clearly the "faux filet" is the specialty of the house. I can't wait to get back to Paris to eat here again.

9/10True experts at their craft of beef. The L bone for two was expensive but delicious and more than enough — just don’t give them cooking instructions. This is a place where butcher knows best.

10/10The restaurant is intimate, you must reserve. Service was friendly and the food delicious. We were a group of four with 4 different orders - boudin noir, beef tataki, beef tartare and faux filet. Everyone was very happy with their dinner. I would definitely recommend this restaurant.
