Our second time there and definitely not our last. Food was amazing and server is very friendly. Minor quibble, lighting was just a bit too bright. Carbonara with truffle was the best I’ve ever had anywhere in Italy and I live here. We also tried the carbonara with pumpkin that was very good as well. I had steak with caramelized onions and balsamic vinegar that was superb. Highly recommended.

Our reservation was for 8 people. We wait for food more than 1,3 hour, after 1h and 30 minutes 2 degustation menu was missing even the most of the food was already eat it… unfortunately a very bad experience with all coordination of the entire order menu!

I found this restaurant relaxing and friendly, with excellent service. The food was very good. I had an interesting starter, which was an fried egg in a small pan covered in truffle shavings. As a main, I had very generous portion of pork shin (stinco), which was delicious. The prices were reasonable.

I was particularly impressed by the Low Temperature Beer Shank, which was incredibly tender and flavorful. The Broccoli and Carrot Flan with Black Truffle Flakes was a delightful surprise, showcasing the creativity and freshness of the kitchen. To cap off the meal, the Cherry Panna cotta was the perfect sweet ending. If you're looking for a memorable Tuscan dining experience, Il Mercante is a must-visit!

Absolute gem of a restaurant in central Pisa: the menu had good choice but not overwhelming, the staff attentive and friendly (as well as very knowledgeable), and the quality of the food was excellent. We were so busy enjoying our dinner, we never even took any photos!

The food was delicious and the place was nice, but the service was poor. There were only one official waitress in the full restaurant. Me and my husband didn't get our foods at the same time, we waited for our check for 30 minutes and decided in the end to pay at the bar side (we weren't the only ones). You couldn't get any prosecco or other sparkling wine/champagne by glass, only bottles. There were many more better restaurants in Pisa so would not go here again unfortunately.
