Great service; Quentin was incredible with his wine reviews; very good non-alcoholic options; the whole menu was excellent and the extra scallops were so worth it.

We enjoyed a relaxed, sophisticated lunch in a favorite neighborhood. Fresh, plentiful, combination of complimentary flavors. My favorite was the Brill, turnip, elderflower and brown butter. Overall, a special experience without unnecessary fussiness.

A fabulous meal in smart, clean and sophisticated atmosphere. Each course was more delicious than the last, and the service was friendly and unpretentious. A highly recommended night out in the heart of Paris. Bon Appetite!

I’ve been thinking a lot about how Restaurants in New York can survive going forward, and I think this restaurant provides a good roadmap. This is really smart cooking - good but not impossibly expensive ingredients, prepared and presented beautifully, with the end result an €85 tasting menu, both wonderful gastronomically and affordable. I loved everything I had, particularly the soft boiled egg in sauce matelote with smoked eel and parsnip chips, and the rouget in a lettuce velouté and Dugléré sauce. Added to my list of regular destinations.

We had a very good overall experience at Cypsèle and a lovely evening.
The fish dishes and desserts were excellent. Service was very good throughout the evening: attentive, professional and pleasant.
On the other hand, the meat dishes did not quite reach the level of the rest of the menu. They were slightly chewy in texture and lacked depth of flavor, especially the duck with black truffle shavings, ordered as a “supplément de la carte” at €80, which fell short of expectations at that price.
Just to clarify for future guests who may have read certain reviews: coffee, digestif, etc., are not included in the €145 price menu.
The dinner lasted 3h15 ; this may be standard for this type of tasting menu, but it felt slightly long for us.
Overall, we had a lovely time with strong highlights. Thank you!

Cypsele moved with a quiet, confident rhythm no flash, no big noise, just everything exactly where it should be. I’d known the project long before it opened and set my expectations high, yet it still went beyond them. Each dish felt precise and deliberate. The small sandwich mise en bouche set the tone; the sea urchin delivered pure depth and salinity; the scallop with its emulsion was smooth and perfectly balanced, lifted by a subtle lemony finish. Then came the defining moment: the fumet d’arêtes de poisson clear, intense, and deeply memorable. The bread was exceptional, impossible not to mention. The duck seated on his sauce made from its blood and liver, was powerful and unforgettable. Desserts kept the momentum, especially the Chartreuse Île Flottante. With a spectacular wine list to match, the experience lingered long after the last course.

Almost everything was quite good but at one point the plate that my partner got was warmer than mine and when we pointed it out the venue pretended that was normal. For the price of the menu I found that to be frustrating.

The service was excellent, the food was very inventive and a pleasure to taste, but it needs a bit more flavor and I would encourage you to take one more creative step, to push the envelope a bit more here and there. Perhaps one specific feedback, some of the food was a bit cooler that it should have been when it came to the table even thought the service was great. Thank you for all of your effort! I will be back to see how you develop!
